It is easier for your digestive system to cope with small meals than it is for big meals. Your body can only use so much of a big meal. Whatever food that is not taken out your body in the form of waste will be turned to fat on your body. You will not want this.
Basically carbs will provide you with fuel to train, while protein will repair the muscle that you damage through your training, you will need certain fats as well which the body requires to function properly.
Training for MMA does require some supplementation, however don't fall for the hype about products that claim that they can turn you into Superman.
